The Burger Bar (Mandalay Bay) – A little sleazy for its location (logoed thongs are prominently offered for sale at the hallway-facing hostess’ stand), but the food’s undeniably good. Obviously, the focus is the burger, and while other options (most of them variations on the sandwich) are offered, there’s little reason to choose anything else. The conceit here is that each burger is extensively customizable, with everything from the bread and the cheese to the toppings selected from a menu. Pesto? Avocado? Salsa? Six kinds of cheese? Three kinds of bacon (not counting prosciutto)? They’ve got all that, and more. And if you’re feeling extravagant, foie gras and truffles are offered (as well as Kobe-style beef). Burgers (and onion rings, which are terrific) are cooked well, and accompanied by a good list of international brews, plus a full bar. Best of all, it’s very reasonably priced for a Strip restaurant…even if it is a glorified shake shack. (5/07)
