Mesa Grill (Caesar’s Palace) – Even though he’s one of the most irritating chefs on the planet, there are few who deny that Bobby Flay can cook. Here, his relentless Southwesternization of everything even extends to brunch, which is served by a comfortable waitstaff in a restaurant that can easily turn frenetic on busy evenings (which are most of them). Menu navigation is simple: the more on-theme the dish, the better it will be. There’s a nice selection of wines, at Vegas-reasonable prices, and the whole experience is rather pleasant. Of course, that’s probably because Flay himself is only occasionally present. (5/07)
