Jean Philippe Patisserie (Bellagio) – This pastry shop is a tourist attraction in itself, with its sculpted glass three-chocolate fountain (white, milk and dark) in perpetual motion. Many, in fact, will get no farther than that. Which is a shame, because the edible offerings here are as extraordinary as they are beautiful.

The bulk of the day is spent selling desserts, cakes, tarts and pre-prepared goodies – plus artisanal ice cream – to passersby, but it would be a shame to miss breakfast, where all the buttery baked richness of a classic European patisserie is on full display. The croissants, in particular, are extraordinary. (5/07)
